Steaks & Creamy Dijon Pan Sauce

with Cherry Mashed Squash & Green Beans

  1. Cook the steaks

    Tip the steaks dry with paper towels; season with salt and pepper on both sides. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high heat. Add the seasoned steaks. Cook, turning once, 8 to 10 minutes for medium-rare (125°F), or until browned and cooked to your desired degree of doneness. Leaving any browned bits (or fond) in the pan, transfer to a cutting board and let rest at least 5 minutes.

  2. Prepare the ingredients & start the sauce

    Meanwhile, wash and dry the fresh produce. Cut off and discard the stem ends of the green beans. Peel and roughly chop 2 cloves of garlic. In a bowl, whisk together the soy glaze, sesame oil, and vinegar. Season with salt and pepper. In the pan of reserved fond, heat a drizzle of olive oil on medium-high heat. Add the chopped garlic. Cook, stirring frequently, 30 seconds to 1 minute, or until fragrant.

  3. Roast & mash the squash

    Preheat the oven to 450°F. Wash and dry the delicata squash. Quarter lengthwise; using a spoon, scoop out and discard the pulp and seeds. Cut crosswise into 1/2-inch pieces. Place on a sheet pan. Drizzle with olive oil and season with salt and pepper; toss to coat. Arrange in an even layer. Roast 18 to 22 minutes, or until tender when pierced with a fork. Remove from the oven. Using a fork, mash to your desired consistency.

  4. Cook the green beans

    Add the prepared green beans to the pan and season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until slightly softened. Add the sauce (carefully, as the liquid may splatter). Cook, stirring frequently, 2 to 3 minutes, or until the green beans are tender and the sauce is slightly thickened. Turn off the heat.

  5. Slice the pork & serve your dish

    While the squash cooks, find the lines of muscle (or grain) on the rested pork; slice crosswise against the grain. Season with salt and pepper if desired. Serve the sliced pork with the finished green beans and roasted squash. Enjoy!
