Shrimp & Pesto Rigatoni
with Zucchini & Feta
Ingredients
- 10 oz Shrimp (Swapped for: 10 oz Cooked Pulled Chicken)
- 10 oz Cooked Rigatoni Pasta
- 1 Zucchini
- 1 oz Sliced Roasted Red Peppers
- 1/4 cup Cream
- 1 1/4 oz Feta Cheese
- 1/4 cup Basil Pesto

Prepare the ingredients & cook the shrimp
- Wash and dry the zucchini; quarter lengthwise, then thinly slice crosswise.
- Pat the shrimp dry with paper towels; season with salt and pepper.
- In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot.
- Add the seasoned shrimp in an even layer. Cook, without stirring, 1 to 2 minutes, or until slightly opaque. Continue to cook, stirring occasionally, 1 to 2 minutes, or until opaque and cooked through.
- Leaving any browned bits (or fond) in the pan, transfer to a plate.

Cook the vegetables
- In the pan of reserved fond, heat a drizzle of olive oil on medium-high until hot.
- Add the sliced zucchini and peppers; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until lightly browned.

Finish the pasta & serve your dish
- Add the pasta, pesto, cream (shaking the packet before opening), and ¼ cup of water (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until combined and heated through.
- Turn off the heat. Add the cooked shrimp; stir to combine.
- Serve the finished pasta garnished with the feta (crumbling before adding). Enjoy!

- Turn off the heat.
- Serve the finished pasta garnished with the feta (crumbling before adding). Enjoy!
