Instructions

  1. Prepare the ingredients

    Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high. Wash and dry the fresh produce. Halve, peel, and thinly slice the onion. Cut off and discard the stem ends of the zucchini; halve lengthwise, then thinly slice crosswise. Peel and roughly chop 2 cloves of garlic. Halve the tomatoes; place in a bowl and season with salt and pepper.

  2. Cook the pasta

    Add the pasta to the pot of boiling water. Cook, uncovered, 10 to 12 minutes, or until tender. Turn off the heat. Reserving 1/2 cup of the pasta cooking water, drain thoroughly and return to the pot. Turn off the heat.

  3. Cook the vegetables

    Meanwhile, in a medium pan (nonstop, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the sliced onion; season with salt and pepper. Cook, stirring frequently, 4 to 5 minutes, or until softened. Add the sliced zucchini, chopped garlic, and as much of the red pepper flakes as you'd like, depending on how spicy you'd like the dish to be. Season with salt and pepper. Cook, stirring frequently, 3 to 4 minutes, or until the zucchini is slightly softened. Add the chopped garlic and cook, stirring frequently, 30 seconds to 1 minute, or until fragrant. Add the seasoned tomatoes and chopped pepper. Cook, stirring frequently, 2 to 3 minutes, or until slightly softened. Turn off the heat.

  4. Cook the shrimp

    Pat the shrimp dry with paper towel; remove the tails and season with salt and pepper. In a large pan, heat a drizzle of olive oil on medium-high until hot. Add the seasoned shrimp. Cook, stirring occasionally, 4 to 5 minutes, or until opaque and cooked through.

  5. Finish the pasta & serve your dish

    To the pot of cooked pasta, add the cooked shrimp, cooked vegetables, butter, parmesan cheese, and half the reserved pasta cooking water. Cook on medium-high heat, stirring vigorously, 1 to 2 minutes, or until combined and the pasta is thoroughly coated. Turn off the heat and taste, then season with salt and pepper if desired. Add the remaining cooking water if the pasta seems too dry. Serve the finished pasta garnished with the parmesan. Enjoy!

Add the seasoned chicken and cook, without stirring, 3 to 4 minutes, or until lightly browned. Continue to cook, stirring occasionally, 3 to 4 minutes, or until browned and cooked through. Transfer to a plate.

Cooking Tip: Cooking pasta al dente (30 secs under cooking forks) and pasta water. Starch in the pasta water will bind with the olive oil to become a light sauce that lightly coats each strand.
