Sheet Pan Southern Pork
with Roasted Vegetables & Maple-Mustard Sauce
Ingredients
- 1 Pork Roast
- 3 oz Radishes
- 1 Tbsp Southern Spice Blend
- 6 oz Carrots
- 1 Yellow Onion
- 1 Tbsp Dijonnaisse
- 1 Pork Roast
- 3 oz Radishes
- 2 Tbsp Maple Syrup
From your pantry: Olive Oil, Salt, Pepper

Prep & marinate
Adjust an oven rack to the center position and preheat the oven to 425°F. Meanwhile, wash and dry the fresh produce. Cut the pork chops into 1-inch pieces; season with salt and pepper and set aside to marinate for at least 5 minutes.

Make the sauce
Meanwhile, in a bowl, combine the soy sauce, mayonnaise, sugar, garlic, and sesame oil; season with salt and pepper to taste.

Slice the pork & serve your dish
Transfer the cooked pork to a serving dish plate. Garnish with the sliced scallions. Serve the pork with the prepared vegetables. Transfer any remaining sauce to a small bowl; transfer to the refrigerator if not using immediately. Enjoy!

Prepare the vegetables
Place carrots and the potatoes in a large bowl. Wash and dry the fresh produce. Cut the bell peppers into 1-inch pieces; transfer to the bowl with the other vegetables. Drizzle with olive oil and season with salt and pepper; toss to combine. Transfer to the prepared vegetables sheet pan and roast in the oven until tender, 20 to 25 minutes.

Season the vegetables
Remove from oven. Transfer the cooked vegetables to a serving dish. Drizzle with sesame oil and season with salt and pepper to taste. Season with soy sauce to taste. Cut into bite-sized pieces if desired. Garnish with sliced scallions. Serve hot. Transfer any remaining to the refrigerator for up to 3 days.

Roast the pork & vegetables
Place on the prepared sheet pan. Drizzle the pork with olive oil; season with salt and pepper. Roast until golden brown and cooked through, 12 to 15 minutes, or until internal temperature reaches 145°F. Remove from the oven; let rest 3 minutes before slicing. Cut each piece into rounds. Transfer to a large plate. Drizzle with any pan juices. Set aside in a warm place.
