Sesame Udon
with Fried Eggs, Snow Peas & Peanuts
Ingredients
- 10 oz Ground Pork
- 10 oz Cooked Pulled Chicken
- 2 Pasture-Raised Eggs
- 1/2 lb Udon Noodles
- 4 oz Snow Peas
- 3 Tbsps Soy-Miso Sauce
- 1 Tbsp Sambal Oelek
- 2 Tbsps Tahini
- 3 Tbsps East Asian-Style Sautéed Aromatics
- 3 Tbsps Roasted Peanuts
- 1 tsp Black & White Sesame Seeds

Prepare the ingredients & make the sauce
Remove the noodles from the refrigerator to bring to room temperature. Wash and dry the snow peas (removing the tough strings if desired). In a bowl, whisk together the tahini, soy-miso sauce, ¼ cup of water, and as much of the sambal oelek as you'd like, depending on how spicy you'd like the dish to be.

Cook the snow peas & noodles
In a large pan (nonstick, if you have one), heat the sautéed aromatics on medium-high until hot. Add the snow peas; season with salt and pepper. Cook, stirring occasionally, 1 to 2 minutes, or until slightly softened. Using your hands, carefully separate the noodles. To the pan, carefully add the noodles and sauce; season with salt and pepper. Cook, stirring constantly, 2 to 3 minutes, or until thoroughly combined and the noodles are heated through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.

Fry the eggs & serve your dish
In the same pan, heat a drizzle of olive oil on medium-high until hot. Crack the eggs into the pan, keeping them separate; season with salt and pepper. Cook 4 to 5 minutes, or until the whites are set and the yolks are cooked to your desired degree of doneness. Turn off the heat. Serve the finished noodles topped with the fried eggs. Garnish with the peanuts and sesame seeds. Enjoy!

In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the pork; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 4 to 5 minutes, or until lightly browned. Add the snow peas and sautéed aromatics (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring occasionally, 1 to 2 minutes, or until slightly softened. Using your hands, carefully separate the noodles. To the pan, carefully add the noodles and sauce; season with salt and pepper. Cook, stirring constantly, 2 to 3 minutes, or until thoroughly combined, the noodles are heated through, and the pork is cooked through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.
Pulled Chicken

In a large pan (nonstick, if you have one), heat the sautéed aromatics on medium-high until hot. Add the snow peas and pulled chicken (tearing the pieces apart before adding); season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until the snow peas are slightly softened and the chicken is heated through. Using your hands, carefully separate the noodles. To the pan, carefully add the noodles and sauce; season with salt and pepper. Cook, stirring constantly, 2 to 3 minutes, or until thoroughly combined and the noodles are heated through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.
