Sambal & Soy-Glazed Salmon
with Vegetables & Brown Butter Scallion Rice
Ingredients
- 2 Salmon Fillets
- 1 Tbsp Sesame Oil
- 1 Tbsp Soy Sauce
- 2 tsps Sambal Oelek
- 1/2 cup Long Grain White Rice
- 2 Scallions
- 1 Tbsp Rice Vinegar
- 1 Tbsp Sambal Oelek
- 1 oz Salted Butter
- 2 Tbsps Soy Sauce
- 1 Tbsp Black & White Sesame Seeds
From your pantry: Olive Oil, Salt, Pepper

Cook & glaze the fish
Pat the fish dry with paper towel and season both sides with salt and pepper. In a large pan, heat 1 tablespoon of olive oil on medium-high heat. Add the seasoned fish and cook 3 to 4 minutes on the first side, or until lightly browned. Flip and cook 2 to 3 minutes, or until lightly browned and cooked through. Transfer to a plate.

Finish the rice & serve your dish
To the pot of cooked rice, add the cooked vegetables and half the remaining curry paste (you may have extra). Stir to combine. Taste, then season with salt and pepper if desired. Serve the finished rice topped with the glazed fish. Enjoy!

Prepare the ingredients & make the glaze
Wash and dry the fresh produce. Peel and roughly chop 2 cloves of garlic. Cut off and discard the stem ends of the green beans; halve crosswise. Halve, peel, and medium dice the onion. In a bowl, combine the soy glaze, sesame oil, and as much of the sambal oelek as you'd like, depending on how spicy you'd like the dish to be.

Cook the rice
In a medium saucepan, combine the rice, a big pinch of salt, and 1 1/3 cups of water. Heat to boiling on high. Once boiling, reduce the heat to low. Cover and cook, without stirring, 13 to 15 minutes, or until the water has been absorbed and the rice is tender. Turn off the heat and fluff with a fork.

Cook the vegetables
Meanwhile, in a medium pan, heat 2 teaspoons of oil on medium-high heat. Add the chopped garlic, diced onion, and halved green beans; season with salt and pepper. Cook, stirring frequently, 4 to 5 minutes, or until the vegetables are softened. Add the remaining curry paste and cook, stirring constantly, 30 seconds to 1 minute, or until fragrant. Turn off the heat.
