Pork Lo Mein

with Vegetables & Sesame Seeds

Instructions

  1. Cook the noodles

    • Bring a medium pot of salted water to a boil. • In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high. • Add the ground pork; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 7 to 9 minutes, or until browned and cooked through. • Meanwhile, to the pot of boiling water, add the noodles and cook, stirring occasionally, 2 to 3 minutes, or until tender. Turn off the heat. • Drain thoroughly and rinse under warm water; return to the pot and cover to keep warm.

  2. Cook the pork & serve your dish

    • To the pan of cooked pork, add as much of the chile paste as you'd like, depending on how spicy you'd like the dish to be. Cook, stirring constantly, 30 seconds to 1 minute, or until fragrant. • Add the soy glaze and 1/3 cup of water; season with salt and pepper. Cook, stirring frequently, 3 to 4 minutes, or until the liquid has slightly thickened. Turn off the heat. • Add the cooked noodles; stir to combine. Taste, then season with salt and pepper if desired. • Turn off the heat and let cool slightly. • Add the pork. Cook, without stirring, 4 to 6 minutes, or until lightly browned. Continue to cook, stirring frequently, 3 to 4 minutes, or until browned. • Taste, then season with salt and pepper if desired. • Turn off the heat and let cool slightly. • Serve the finished pork and vegetable ramen garnished with the sesame seeds. Enjoy!

  3. Prepare the ingredients & make the sauce

    • Fill a medium pot with salted water; cover and heat to boiling on high. • Wash and dry the fresh produce. • Halve the bok choy lengthwise. • Thinly slice the scallions on an angle. • In a bowl, combine the chopped garlic, soy sauce, sesame oil, and maple syrup.

  4. Cook the vegetables

    • In a large pan, heat a drizzle of olive oil on medium-high. • Add the halved bok choy, cut side down. Cook, without stirring, 3 to 4 minutes, or until lightly browned. • Add 2 tablespoons of water (be careful, as the liquid may splatter). Cover and cook 2 to 3 minutes, or until the bok choy is softened and the water has cooked off. • Add the sauce (carefully, as the liquid may splatter). Cook, stirring frequently, 1 to 2 minutes, or until the bok choy is coated and the sauce has thickened. • Transfer to a serving dish; cover with foil to keep warm. • Wipe out the pan.
