Bucatini & Shrimp
with Tomatoes, Zucchini & Parmesan
Ingredients
- 4 oz Grape Tomatoes
- 2 Tbsp Mascarpone Cheese
- 1 Tbsp Calabrian Chile Paste
- 1/2 lb Bucatini Pasta
- 2 cloves Garlic
- 1/4 cup Grated Parmesan Cheese
- 10 oz Tail-On Shrimp
- 1 Zucchini
- 1 oz Sliced Butter
From your pantry: Olive Oil, Salt, Pepper

Prepare the ingredients
Fill a large pot ¾ of the way up with salted water; cover and heat to boiling on high. Wash and dry the fresh produce. Cut the peppers into ½-inch-wide strips. Peel and roughly chop 2 cloves of garlic. Remove the plastic casing from the sausage.

Cook the pasta
Add the pasta to the pot of boiling water. Cook, stirring occasionally, 10 to 12 minutes, or until tender. Turn off the heat. Reserving ½ cup of the pasta cooking water, drain thoroughly and return to the pot.

Cook the vegetables
Meanwhile, in a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high heat. Add the sliced peppers; season with salt and pepper. Cook, stirring frequently, 4 to 5 minutes, or until slightly softened. Add the chopped garlic and Italian seasoning. Cook, stirring frequently, 1 to 2 minutes, or until fragrant.

Add the shrimp
Add the seasoned shrimp to the pan of peppers and garlic. Cook, stirring frequently, 2 to 3 minutes, or until the shrimp are opaque and cooked through. Turn off the heat.

Finish the pasta & serve your dish
To the pot of cooked pasta, add the cooked vegetables and shrimp, butter, mascarpone (tearing the packet before adding), and half the reserved pasta cooking water. Cook on medium-high heat, stirring constantly, 1 to 2 minutes, or until combined. Turn off the heat. Taste, then season with salt and pepper if desired. If needed, gradually add the remaining cooking water to ensure the pasta is thoroughly coated. Serve the finished pasta garnished with the parmesan cheese. Enjoy!
