Beef & Ramen Noodle Stir-Fry
with Bok Choy & Sesame Seeds
Ingredients
- 2 cloves Garlic
- 2 tbsps Soy Glaze
- 1 tbsp Mirin
- ¼ lb Fresh Ramen Noodles
- 10 oz Baby Bok Choy
- 2 tsps Chipotle Chile Paste
- 10 oz Thinly Sliced Beef
- 10 oz Ground Pork
- 2 tsps Black Bean Sauce
- 1 tbsp Black & White Sesame Seeds
From your pantry: Olive Oil, Salt, Pepper

Prepare the ingredients & make the sauce
Wash and dry the fresh produce. Cut off and discard the root ends of the bok choy; roughly chop the leaves and stems. In a bowl, whisk together the soy sauce, sesame oil, sugar, and as much of the sambal oelek as you'd like, depending on how spicy you'd like the dish to be.

Cook the beef & bok choy
In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high heat. Add the chopped bok choy and beef; season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until the beef is lightly browned and the bok choy is slightly wilted. Add the sauce (carefully, as the liquid may splatter) and sliced scallions; season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until combined and the beef is cooked through. Turn off the heat.
